Quinoa/Broccoli Salad
A salad featuring quinoa, almonds and grapes.
After buying and tasting a similar salad in a local deli, I decided that it should not be too hard to duplicate. I was right and here is the salad recipe I came up with. Believe me, it is very delicious and you won't have to beg your children to eat their broccoli.
The quinoa adds a nutty flavor and the almonds add crunch. The grapes meld well with the vinegar and olive oil dressing. All in all .. a very successful and tasty salad and you won't have any leftovers.
This salad would be a wonderful dish to take to a barbecue or a potluck dinner. I used it as a luncheon dish served with hot, homemade sourdough buns.
Cooking the quinoa and broccoli and making the salad dressing the day before makes this a quick and easy salad to make.

Whip up this easy-to-make balsamic vinaigrette. A basic staple dressing, anytime for the oil-and-vinegar lovers at your table. (My family like their's sweet so I have added sugar.)
Ingredients
- 3/4 cup (175 mL) extra-virgin olive oil
- 1/3 cup (75 mL) balsamic vinegar
- 2 tsp (8 mL) white sugar (or sweeten to taste)
- 1/4 tsp (1mL) of salt
Instructions
- In a large bowl combine oil, vinegar, sugar and salt. Whisk until it thickens.
- Refigerate.

Quinoa/Broccoli Salad
Advance preparation makes this salad quick and easy to assemble. I did the following the day before I served this salad.
1. Make the Balsamic Vinaigrette dressing (Refrigerate in airtight container for up to 3 days.)
2. Cut the florets off a large head of broccoli. Steam until tender crisp .. cool in refrigerator.
3. Cook quinoa according to recipe on the container .. cool in refrigerator. (I cook 1/2 c. quinoa to 1 cup water.) When you cook quinoa it is very similar to cooking rice.
Ingredients
- 3 cups cold/cooked broccoli florets
- 1 cup cold/cooked quinoa
- 1/2 cup slivered blanched almonds
- 1 cup halved red grapes
- Balsamic Vinaigrette dressing
Instructions
- ~ Combine broccoli, quinoa, almonds and grapes in a large bowl.
- ~ Dress with Balsamic Vinaigrette to suit your taste.
- ~ Toss to mix ingredients.
- * Serve in a bowl worthy of this divine salad.

I think there is something wonderful about being served a delectable salad in a beautiful bowl. Sometimes the simplest fare is enhanced by the dish in which it is served.

How many times I have worried that a certain food I had packed for travel would spill before we arrived at our destination. I think that this would be a very handy bowl to have. No more messy spills.
